We have compiled our favourite chicken recipes you can follow to create the dinner for you and your family.
1) Warming Chicken Soup
Ingredients:
– 5 medium carrots, peeled and chopped
– 3 celery stalks, chopped
– 1 brown onion, chopped
– 3 cloves of garlic, minced
– 3 tablespoons of tomato puree
– 1 tsp of dried oregano
– 1 tsp of dried thyme
– 1 tsp of dried Italian seasoning
– 5 cups of chicken stock
– 1lb of chicken thigh, trimmed and chopped
Using vegetable oil, fry the vegetables. Add the rest of the ingredients and place the chicken into the pot. Cook for 15 minutes on high pressure for a perfect one pot meal!
2) Yummy Chicken Curry
Ingredients:
– 1 brown onion, chopped
– 3 gloves of garlic, minced
– 2 celery stalks, chopped
– 4 potatoes, chopped
– 1 cup of cherry tomatoes, roughly chopped
– 1 can of light coconut milk
– 1/4 cup of red curry paste
– 3 tablespoons of honey
– 3 chicken stock cubes
– 1/2 cup water
– 1lb of chicken thighs, trimmed and chopped
Fry off vegetables in the Instant Pot for 3 to 4 minutes. Then lay the chicken on top of the sautéed vegetables and pour over the coconut milk. Mix in the water, stock, and curry paste. Cook on high pressure for 20 minutes.
3) Quick Instant Pot Shredded Chicken
Ingredients:
– 2lbs chicken breast
– 4 cloves of garlic, minced
– 1 teaspoon of garlic powder
– 1 teaspoon of smoked paprika
– 1/4 cup of chicken stock (low sodium)
– 1.5 cups of BBQ sauce
– Pinch of salt
Combine all ingredients in the instant pot and cook on a high pressure for 10 minutes. Best served with guacamole and tortillas for a quick one pot meal !
4) Italian Chicken Pasta
Ingredients:
– 2 tablespoons of butter with 1 garlic clove minced
– 1lb of chicken breast, trimmed and chopped
– 1 cup of double cream
– 3 cups of low-sodium chicken stock
– 1 red bell pepper
– 500g of fusilli pasta, cooked
– 2 cups of spinach
– 2 cups of cheddar cheese
– 1/4 of parmesan
Sauté chicken and garlic butter to seal the meat. Pour the cream, broth, and vegetables over the chicken. Cook on high for 15 minutes. Add the spinach and cooked pasta.
5) Lemon and Mushroom Chicken
Ingredients:
– 1 stick of butter
– 3 cloves of garlic, minced
– 1 brown onion, chopped,
– 1 cup of brown mushrooms, sliced
– 1 teaspoon of dried parsley
– 2lbs of chicken thighs, chopped
– 1 cup of low-sodium chicken stock
– 1/2 cup of double cream
– Zest and juice of 1 lemon
– 1/4 cup of fresh water
Sauté onions and mushrooms in the pot with the garlic and seasonings. Add the chicken to seal it. Add the broth and lemon juice. Cook for 20 minutes on high pressure. When finished mix in the double cream. Serve with pasta or boiled potatoes. The perfect one pot meal.
